Makes about 16

100g pecans (I used Brazil nuts)

100g walnuts

50g sunflower seeds

50g pumpkin seeds

6 medjool dates - stoned (I used about 12 normal dates)

1 large banana

1tbs coconut oil

½tbs cinnamon

2tbs maple syrup or honey

  • Preheat oven to 180oC.
  • Line a small baking tray with baking paper and grease lightly with olive oil or coconut oil.
  • If using normal dates, these need to be softened by soaking for 10mins in boiling water.
  • Put all the nuts and seeds in a blender and blitz, transfer to a bowl.
  • Put all the other ingredients into the blender and blitz to make a paste.
  • Add the paste to the nuts and mix thoroughly.
  • Spread the mixture on to the tray to an even layer about 1½cm thick.
  • Bake for 20 - 25 mins, cool then cut
  • You can use different nuts and add some dried fruit
