Makes 8

2 cups ground almonds

1 tbs cinnamon

4 eggs

2 tsp vanilla essence

1/4 coconut oil

1/2 cup coconut sugar

pinch sea salt

1 cup chopped dates

1 tsp baking powder

1/3 cup chopped cacao melts (or chopped dark chocolate, 70% would be best)

1/4 cup flaked almonds (to sprinkle on top)  *I didn't add these

  • Preheat oven to 180C Prepare 8 muffin cases
  • Mix all ingredients (except the dates, cacao and almond flakes) until well combined
  • Mix in dates and cacao
  • Scoop mixture in to muffin cases, sprinkle with flaked almonds
  • Bake for approx. 15mins or until golden
  • Enjoy!

Store in an airtight container for max 3 days, will freeze
