Granola

 

Makes about 800g (1 portion is 40g-45g)

400g oat flakes

50g chopped brazil nuts

50g sunflower seeds

50g pumpkin seeds

50g desiccated coconut

Pinch of sea salt

120g coconut oil

90g honey or maple syrup

130g dried fruit of choice (currants, raisins, chopped dates, chopped dried apricots, chopped prunes)

50g ground flax seeds

  • Preheat oven to 140oC
  • Mix all dry ingredients together in a large bowl (except the flaxseeds)
  • Melt the coconut oil in a small pan and leave to cool slightly.  Put the honey/maple syrup into a bowl and add the coconut oil.
  • Pour the wet mixture into the bowl of dry ingredients and mix thoroughly.
  • Lay out the mixture in a thin even layer on two large baking trays.  Put then in the oven and bake for about an hour (can bake longer if you like more of a crunch)
  • Prepare dried fruit and add ground flaxseed
  • Once the granola is baked, leave to cool on the baking the ray for 20mins, then transfer to a clean mixing bowl  and stir in the dried fruit and ground flaxseed.

Store in an airtight container for up to 2 weeks

Lovely served with milk or yoghurt
