Makes about 12 cookies

1 egg

½ cup nut or seed butter

1/4 cup maple syrup

1 medium banana mashed

1 tsp vanilla extract

½ cup oats

½ cup quinoa flakes

1 tsp baking powder

1 tsp cinnamon

½ tsp nutmeg

1/4 tsp salt

3/4 cup grated carrots

1/4 cup chopped walnuts (optional)

  • Preheat oven to 180oC.  Grease or line baking sheet with parchment.
  • Whisk the egg.
  • Beat together the nut butter, syrup, banana and vanilla in a large bowl.  Add egg and mix to combine.
  • Pour in the oats, quinoa flakes, baking powder, spices and salt and stir together.
  • Fold in the grated carrots and walnuts.
  • Drop a heap tablesppon of the dough on to the baking sheet and repeat.
  • Bake in the centre of the oven for 15 minutes until the edges are golden brown.  Remove and allow to cool for 5 minutes before transfering to a cooling rack.
  • Enjoy at room temperature or slightly reheated.
  • Serve 2 for breakfast with a dollop of Greek yoghurt and some berries.
