Makes about 12 cookies

1 egg

½ cup nut or seed butter

1/4 cup maple syrup

1 medium banana mashed

1 tsp vanilla extract

½ cup oats

½ cup quinoa flakes

1 tsp baking powder

1 tsp cinnamon

½ tsp nutmeg

1/4 tsp salt

3/4 cup grated carrots

1/4 cup chopped walnuts (optional)

 

Preheat oven to 180oC.  Grease or line baking sheet with parchment.

Whisk the egg.

Beat together the nut butter, syrup, banana and vanilla in a large bowl.  Add egg and mix to combine.

Pour in the oats, quinoa flakes, baking powder, spices and salt and stir together.

Fold in the grated carrots and walnuts.

Drop a heap tablesppon of the dough on to the baking sheet and repeat.

Bake in the centre of the oven for 15 minutes until the edges are golden brown.  Remove and allow to cool for 5 minutes before transfering to a cooling rack.

Enjoy at room temperature or slightly reheated.

Serve 2 for breakfast with a dollop of Greek yoghurt and some berries.
